What exactly does Certificate of Traceability mean?
The Certificate of Traceability of an agro-industrial production chain, according to international legislation UNI EN ISO 22005 - 2008, which replaced the national UNI 10939 of 2001, certifies that the traceability of the product is reliably guaranteed and documented, throughout all processing stages from viticulture through to winemaking.
Why is the Certificate of Traceability of the production chain so valuable?
• Certification is a guarantee for the consumer as it provides a food product whose processes, from the outset and throughout production, have been managed and controlled.
• The management of production, in batches, enables the fast identification of the materials used and the processes involved in achieving the finished product.
• The ability to easily recall the product in an emergency situation, to be able to easily identify and isolate the responsible link in the production chain.
• It enhances mutual cooperation between suppliers and intermediaries, united by the shared principles of the production chain.

TRANSPARENCY TOWARD THE CONSUMER.Caviro undertakes routine and rigorous evaluation of the supply chain - individual batches of wine supplied by associated wine producers are selected by a panel of wine experts and undergo testing in order to assess their conformity to analytical specifications.
At the production facility in Forlì, 384 tests are carried out on a daily basis, over a period of 253 working days. For each sample, a number of analytical tests are carried out, as well as chemical-physical analysis for a total of 97,152 analytical tests and more than 15,000 microbiological analyses.
Both production facilities, in Forlì and Savignano sul Panaro are UNI EN ISO 9001.2000 certified, for industrialization, production and marketing of bottled wine, Tetra Brik ®, bag in box and keg.
The production facility in Faenza has ISO 9001 Quality Assurance certification for the production and marketing of grape musts, spirits, tartrate and sugars.
