Caviro is opening a new chapter in its oenological innovation with Tavernellow 3%, the partially dealcoholized sparkling wine designed to intercept new consumption trends and offer a lighter, more contemporary way to enjoy wine. A product that stems from a major technological investment and a clear vision: responding to an evolving market without compromising on quality, the supply chain, or Italy’s winemaking tradition.
A unique dealcoholization plant in Italy
Caviro has built a new dealcoholization facility in its plant in Savignano sul Panaro (MO), an investment of over €1.8 million and the result of a project that involved all phases—from engineering design to installation and final testing—demonstrating the Group’s commitment to technological innovation and the enhancement of the supply chain.
The facility can achieve a production capacity of 30,000 liters per day, with an annual potential exceeding 9 million bottles. A significant milestone for the cooperative, which thus becomes a pioneer in Italy in the production and bottling of low-alcohol wines entirely made on national territory.
The plant uses a controlled process of vacuum evaporation and low‑temperature distillation, a technology that allows the alcohol content to be reduced while preserving the wine’s aromas, structure, and identity.
Tavernellow 3%: light bubbles, authentic taste
With an alcohol content of 3% vol, Tavernellow introduces a new concept of sparkling wine: light, modern, accessible, and perfect for informal moments or for those who prefer a more moderate consumption without giving up the pleasure of wine.
It is produced through traditional winemaking and then undergoes a controlled partial dealcoholization process that ensures sensory balance and full respect for its organoleptic profile. It is not a flavored beverage but a true wine, simply lighter in alcohol, fully compliant with current regulations.
Tavernellow 3% comes in two versions: Spumante Bianco, fresh and harmonious, with aromatic notes and a pleasant balance between acidity and sweetness, ideal for aperitivo; and Rosato, vibrant and crisp, with a delicately balanced sweetness, perfect for an informal lunch with friends.
The official debut will take place at Vinitaly, followed by distribution through major retail channels.
A response to new consumption styles
The demand for NoLo (no/low alcohol) wines is rapidly growing worldwide. Consumers are looking for lighter alternatives suited to different moments of the day. Tavernellow 3% has been developed precisely to respond to this evolution.
